Mechanism of action
Microbial fermentation (e.g., Bacillus subtilis, Aspergillus oryzae) hydrolyses soybean isoflavone glycosides to aglycone forms (daidzein, genistein) via beta-glucosidase activity. Aglycone forms are more readily absorbed than glycosides. Fermentation also produces postbiotic short-chain fatty acids and enzymes. Natto-type ferments additionally contain vitamin K2 (MK-7) with anti-inflammatory properties.
